| Wine making process | Healthy, well ripened grapes harvested manually to ensure quality. The fermentation is conducted for 15 days in temperature regulated short stainless-steel tanks through the temperature control process between 25° C and 28° C. We want to conserve the fruit of wine and keep the typicity of Cahors and of the grape-variety, the Malbec with the little addition of Merlot. |
