After a brief period of preferment Ary maceration, extraction is conducted by "Pumping over" the caps. After a brief period of pre-fermentation maceration, extraction is conducted by "pumping over" the caps. The temperature of alcoholic fermentation is regulated at approximately 26°C. Natural malolactic fermentation is taking place. Total maceration never exceeds 12 days to offer an abundance of fullness and fruitiness. |
